Simple pan-roasted lamb chops are served alongside deliciously spiced stewed green beans and tomatoes in a riff on a Lebanese favorite, lubiyeh. Serve with: Bulgur or rice pilaf.

Ingredients

1 tablespoon plus 1 teaspoon extra-virgin olive oil, divided
1 medium yellow onion, chopped
2 tablespoons chopped fresh mint or 2 teaspoons dried, divided
1/2 teaspoon ground cinnamon
1 teaspoon salt, divided
1/4 teaspoon freshly ground pepper, plus more to taste
3 cups diced tomatoes (4-5 medium)
1/3 cup water
12 ounces green beans, trimmed
8 lamb loin chops, trimmed (1 1/2-1 3/4 pounds total)

Directions

1. Preheat oven to 400�F.

2. Heat 1 tablespoon oil in a large saucepan over medium heat. Add onion and cook, stirring occasionally, until tender and light brown, about 5 minutes. Add 1 tablespoon fresh mint (or 1 teaspoon dried), cinnamon, 1/2 teaspoon salt and pepper to taste; cook, stirring, until fragrant, about 30 seconds. Add tomatoes and water and increase heat to high. Cook, stirring occasionally, until the tomatoes begin to break down, 2 to 3 minutes. Stir in green beans. Reduce heat to medium, cover and cook, stirring occasionally, until the green beans are tender, about 12 minutes.

3. Meanwhile, sprinkle both sides of lamb chops with the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Heat the remaining 1 teaspoon oil in a large ovenproof skillet over medium-high heat. Add the lamb chops and cook until browned on one side, about 2 minutes. Turn them over and transfer the pan to the oven. Roast until an instant-read thermometer inserted horizontally into a chop registers 140�F for medium-rare, 6 to 10 minutes, depending on thickness.

4. Stir the remaining mint into the green bean mixture. Serve the lamb chops with the green beans.

2 medium onions, cut into wedges

1 15-ounce can garbanzo beans, rinsed and drained
1-1/2 cups water
1/2 cup raisins
1/3 cup small pitted ripe olives
3 cups hot cooked couscous
1/4 cup snipped fresh cilantro

Directions

1. In a bowl coat chicken pieces with a mixture of flour, coriander, cumin, paprika, salt, and cinnamon. Set aside.

2. In a 4-quart Dutch oven cook onion and garlic in hot oil about 5 minutes or until tender. Remove from Dutch oven, reserving oil in pan. Add chicken pieces, about half at a time, to pan. Cook quickly until lightly browned, stirring frequently. Return all chicken and the onion mixture to pan. Add crushed tomatoes, beans, water, raisins, and olives. Bring to boiling; reduce heat. Simmer, covered, about 10 minutes or until chicken is tender, stirring occasionally. Spoon couscous into soup bowls. Ladle stew over the couscous and sprinkle with snipped cilantro.

1/2 teaspoon salt
1/2 teaspoon whole black peppercorns, crushed
Assorted peeled and cut up vegetables, such as carrots, turnips, and sweet peppers (optional)

Directions

1. Trim excess fat from lamb. Cut several 1/2-inch-wide slits randomly into top and sides of roast. Insert garlic slivers into slits. In a small bowl stir together coriander seed, lemon peel, olive oil, cumin seed, salt, and pepper. Rub lamb surface with spice mixture. Cover and chill for several hours or overnight, if desired.

2. Preheat oven to 350 degree F. Place lamb on a rack in a shallow roasting pan. Roast lamb for 1-3/4 to 2-1/4 hours or until a meat thermometer inserted in the thickest portion of the meat registers 140 degree F for medium-rare doneness. or 155 degree F for medium doneness. If desired, add assorted cut up vegetables during last 45 minutes of cooking.

3. Remove lamb from oven. Loosely cover with foil. Let stand for 10 minutes (the temperature of the meat will rise about 5 degree F during standing time). Slice and serve lamb with the roasted vegetables, if desired. Makes 10 servings.

Pachee is a turn based board game in which you compete against 3 other players. Each player has 4 playing pieces of a certain color. These pieces begin the game in the players home field. The goal is to be the first player to bring all of your pieces onto the target fields. When it is your turn, you can roll the die. The number rolled determines which moves you can make.

To move a playing piece out of the home field, you have to roll a "6". If all of your pieces are on the home field you can attempt to roll a "6" up t 3 times in a row. If you roll a "6", you can move one of your pieces onto the starting field. The die number also determines how many fields you can move your piece forward around the board. (for example: if you roll a "4", you can move 4 fields forward, provided the way is not blocked by another one of your pieces).

If you roll a "6", you can move one of your pieces forward 6 fields and then roll again. This is not the case, however, if you choose to move a piece from the home field to the starting field. The most exciting part of the game, of course, is when you throw your opponents pieces off the board. You do this simply by moving your piece onto a field occupied by one of your opponents pieces. Pieces displaced in this manner return to the players home field.

Once you have reached one of your target fields, you can move normally onto a free target fields, you can move normally onto a free target field. If the number rolled does not allow you to make a valid move, the next player begins their turn. The first player to place all 4 pieces on the target fields win the game. There are three game modes available: Quick Play, Journey Mode and Custom Game Mode.

During Journey Mode, you can unlock additional features such as new boards, special fields, and tokens. The special fields allow you to make perticular moves. The Save field protects your pieces from being thrown off the board by other pieces, or moved using tokens. The Bonus field lets you roll the die again when you land on it.

The game is very interesting and reminds me my childhood when I used to play Ludo with all my family members. In Countries such as India and Pakistan, this game is known as Ludo and it is one of the most popular board game played in every family. A Barefoot Activity for Kids

Create these easy to make healthy veggie treats that are sure to scare your party guests.
1. Peel the tomato skin, as you would a potato. Cut the skin into small pieces.
2. Cut each olive into 4.
3. Cut a very small sliver from an end of each cheese ball.

4. To assemble, take a toothpick and push it through the cheese (cut side up).
Thread the tomato and olive onto the stick and then use your finger to carefully
push the tomato and olive into the soft cheese, to make it look like an eye.
Presto, you have bloodshot scary eyes.
